For one unforgettable day, the island of Pag became a meeting point for pizza enthusiasts, professionals, and lovers of authentic Neapolitan tradition through the experience of D10’s Pizza Academy.
Hosted in collaboration with Molino Piantoni and supported by Mia Familia, the masterclass brought together participants ranging from curious pizza enthusiasts to experienced pizzaioli and pizzeria owners.
The goal was not only to show how pizza is made, but to go deeper into the decisions behind it: how flour behaves, how fermentation changes the dough, how ingredients affect the final result, and why discipline matters in every step of the process.

Learning from Emanuele Archimio
Under the guidance of renowned pizzaiolo Emanuele Archimio, participants worked through the fundamentals of fermentation, dough management, flour selection, and the use of premium ingredients.
The workshop was built around technical precision, but also around the philosophy behind authentic Neapolitan pizza: respect for tradition, consistency, patience, and the ability to repeat quality under real conditions.

From Flour to Final Result
Throughout the day, attendees worked with Molino Piantoni flours and gained a clearer understanding of how fermentation, hydration, handling, and ingredient quality directly shape the final pizza.
The hands-on approach allowed participants to follow every stage of the process firsthand, from dough preparation and handling to baking, tasting, and understanding the small details that separate a good pizza from a truly precise one.

Building Pizza Culture on Pag
D10’s Pizza Academy continues to grow as a unique educational platform in Croatia, bringing international experts and pizza professionals to the island to share knowledge and raise the level of pizza culture on Pag.
